Evan Centopani: Nutrition & Food Preparation - Part 1 & 2


Evan uses parsley and oregano on his fish. He likes it on the bland side but he needs to add more seasoning he can do that too. Evan had to replace the butane lighter from running the broiler so much. Evan eats so much green that he doesn't wear deodorant & his "stuff" don't smell. You should buy fresh fish from the fish market because you don't know what supermarkets put in their fish to plump them up. He's been fresh fish since the 09 NY Pro.


Evan uses Old Bay Seasoning & then he sprinkles on the oregano & parsley mix on the fish. He cooks his fish for about 10-15 minutes but as the oven/broiler gets hotter, less cooking time. Evan says make sure that food is cool to vacuum seal or put in Tupperware. 12 oz. of fish for two of his meals. He's speaking some great wisdom.
