The Alamo Bowl

(Makes 4 servings)

Ingredients:
• 3-4 boneless, skinless chicken breasts
• 1 cup brown rice, cooked
• 1 medium can black beans, drained
• 1 medium can corn, drained
• 1 can spicy stewed tomatoes
• 1 cup fat-free cheese, shredded or grated
• 1 medium-sized avocado or guacamole

Directions:
Boil chicken in water until cooked throughout (about 20 minutes). Then cut the fowl into small pieces. Place chicken, beans, corn and tomatoes in a large, oven-safe Pyrex dish or bowl, stir until mixed, and top with shredded cheese. Bake for 10 minutes (or until cheese melts) in an oven that has been preheated to 350°F. Top with sliced avocado or guacamole.

This is really sounds very tasty. I would sub the stewed tomatoes with salsa. If you don't like some of the items, substitute them for something else. Try other types of protein & see what happens.
