Miner’s Breakfast


Cut one 5-ounce potato into cubes. Bring 2 cups of water to a boil in a medium saucepan. Add potato cubes and boil for 5–7 minutes.
Coat skillet with olive oil cooking spray and heat over medium. Add potatoes, 2 trips of lean turkey bacon and 1/8 cup chopped red pepper. Sauté for 2 minutes.
Pour 1 cup of egg whites into skillet and reduce heat to low. Cover and cook for 5–6 minutes.
