Black Bean Compote
1 tsp grapeseed, coconut or Mac nut oil

Directions
BBQ sauce
Whisk together all ingredients in a bowl, Add to a saucepan, and cook over low heat for 5-6 minutes or until the flavors have blended. Set aside.

Black Bean Compote
Heat oil in a saucepan over medium-heat heat until on the verge of smoking. Add onions and cook, stirring frequently, until onions are slightly translucent, about 5 minutes. Reduce the heat to medium. Add peppers, tomatoes, beans, salt, and pepper to taste, and cook for 9-10 minutes. Remove from heat, Add vinegar, parsley, and cilantro, and stir.

1. Preheat grill to medium-high heat. Coat the grill plates with oil to prevent sticking.

2. Season salmon fillet with salt and pepper, and grill for 7-8 minutes on the first side. Carefully flip over fillet, and continue cooking for 5-6 minutes. Once cooked, remove and glaze with BBQ sauce.
3. Spoon black bean compote onto the center of a plate and top with glazed salmon.
