Step 1: Cut 1 pound (16 ounces) Of or an stewing beef into cubes. Coat a
large pot with olive oil spray and heat over medium. Add beef and brown
on all sides (3-5 minutes), stirring constantly.
Step 2: Add 1/2 cup of low-sodium beef stock; cover and cook for 7 minutes over medium heat.
Step 3: Add 1 package (10 ounces) Of frozen peas and carrots and 1 cup
of drained (canned) baby white potatoes. Cover and simmer for 5 minutes.
Let stand for 2 minutes; mix and serve.
