2 6-oz salmon fillets
1/2 Lemon, juiced
1/2 cup water
1/4 cup quinoa
1/4 cup walnut pieces
1 tbsp. low-sodium soy sauce
1 tbsp. maple syrup
1 tbsp. olive oil
Pinch salt
Directions:
Mix together soy sauce, half the lemon juice and maple syrup. Place salmon in a glass baking dish; pour marinade over top. Marinate for 30 minutes or more.
Add quinoa and remaining lemon juice to a pot of boiling water. Reduce heat to low and simmer for 10-15 minutes until quinoa has absorbed the water. Fluff thoroughly with fork and stir in walnuts.
Meanwhile, heat oil in a skillet on medium high. Cook fish skin side down for 6 minutes and flip. Cook another 4 minutes. Serve over quinoa.
