1/2 bell pepper (sliced)
1/2 green bell pepper (sliced)
1/2 medium onion (sliced)
2 pinches of sea salt
2 pinches of black pepper
1 Tbsp of extra-virgin olive oil
1 small can of tomato paste
1/4 cup of chicken broth
10 oz. of chicken breast
8 oz. of baking potatoes
2 leaves of fresh basil
Directions:
On medium-heat, preheat the extra-virgin olive oil in a saute pan. After one minute, add chicken breast. Cook for two minutes on each side, & then remove. Add the potatoes & stir often for five minutes or so. Add the peppers & onions. Stir. After two minutes, add the tomato paste, salt & pepper, basil & chicken stock. Cover for another six or seven minutes or so. Add the chicken breast back into the saute pan, & cover. Cook for another three minutes or so. The dish should be complete!!!!
I'm not a big fan of the peppers & onions but I'd give it a try. Plus, you want more more carbs, go with some rice or a sweet potato. As well, try this with other proteins.
