Chicken Salad Sandwich

(Makes 4 servings)
Ingredients:
• 4 boneless, skinless grilled chicken breasts
• 1/2 cup mustard
• 1/2 cup dill relish
• 1/2 cup scallions, chopped
• 1 tsp. dill weed seasoning
• 1 tsp. garlic powder
• 1 tsp. pepper
• 2 slices whole-wheat bread or toast
• 4 leaves of lettuce
• 1 sliced tomato
• 1 sprinkle sea salt

Directions:
Shred chicken in a food processor and mix in seasonings. Serve on bread with lettuce and tomato.

TIP: For a twist, you can prepare a salad and make this chicken spread a chicken salad. Your favorite light mustard vinaigrette dressing would complement this very nicely.

I like the grilled chicken of course but I would spinach instead for more protein, I like the taste of spinach. Spinach helps you with protein synthesis. I don't like my chicken cold. Give it to me either hot or warm & then I'd eat it.
