Ingredients:
• 10 oz. bone-in, skinless chicken breasts
• 1 cup cooked brown rice
• 3 garlic cloves, whole
• 4 mushrooms, sliced
• 1 zucchini, sliced
• ½ red onion, sliced
• ½ tsp. thyme, crushed
• 1 tsp. chopped fresh basil
• 1 cup chicken stock
• 1 Tbsp. extra virgin olive oil
• 2 pinches salt
• 2 pinches black pepper
• 1/8 cup red wine vinegar
• Olive oil spray
Directions:
Preheat your oven to 400°F. Coat the bottom of a pan with olive oil. Place the chicken breasts in the pan and spray the top with the olive oil spray. Place in the oven for 15 minutes uncovered. Meanwhile, cook rice according to package directions. Mix all the remaining ingredients in a bowl. Remove chicken from the oven and add all the other ingredients. Cover. Return to the oven and cook for an additional 30 minutes. When finished, remove the breast first and place in a serving dish. Add rice, vegetables and remaining sauce.
