Beef Tacos

Ingredients:
8 oz. extra lean ground beef (17% fat)
2/3 cup salsa
4 medium-sized taco shells
1/2 cup fat-free cheddar cheese (shredded)
1 cup shredded lettuce
1/4 cup chopped tomatoes

Directions:
In a medium skillet heat ground beef over moderate heat until fully cooked (approximately 5 minutes). Drain extra fat from skillet, add the salsa, & place back on stove. Bring to a boil. After the mixture boils, reduce heat & simmer until all the liquid is absorbed. Place meat in taco shells with a spoon & top with lettuce, tomatoes & cheese. Serve.
