Ingredients:
• 2-1/2 cups dry rolled oats
• 6 egg whites
• 1 cup milk of your choice
• 1 tablespoon ground flaxseed
• 1 tablespoon safflower oil
• 1 teaspoon baking powder
• 1 teaspoon vanilla
• 1 teaspoon cinnamon
• Cooking spray
Directions:
Place all the ingredients except the cooking spray into a blender or food processor and blend for 20 seconds, until smooth. Spray a griddle or skillet with cooking spray and heat over medium heat. Pour 1/4 cup of pancake mixture onto the griddle or skillet. Cook until the pancakes are dry and bubbly around the edges. Bubbles should appear on top as well. Turn over and brown the other side.
