
Ingredients
- 2 large portabella mushroom caps
- 1/2 small zucchini sliced
- 2 tsp roasted red bell peppers (from jar)
- 2 slices low fat cheese
- Spinach (to garnish)
- 100% whole wheat sandwich thins
Directions
- Heat grill.
- Lightly brush mushroom caps with olive oil.
- Grill mushroom caps and zucchini slices until tender.
- Place on sandwich thin. Top with sliced cheese, roasted red bell pepper, and spinach.
