
• 2 jars plain tomato sauce
• 1 ½ lbs. ground turkey breast
• 1 egg
• ¼ cup plain breadcrumbs
• 2 chopped garlic cloves
• ¼ medium onion, chopped
• 4 sprigs fresh parsley, chopped
• 1 tsp black pepper
• ½ tsp salt
• ½ cup brown rice (dry measurement)
Directions:
Pour tomato sauce into a large saucepot and heat it over a medium flame. While sauce is heating, combine all other ingredients except rice in a large mixing bowl and mix well. Increase heat until sauce comes to a boil, and then reduce the flame back to medium. Use an ice-cream scoop to form meatballs. Add as many as you can to the sauce. Once they are done, take the cooked meatballs out of the sauce and add more. In the meantime, cook the brown rice. Place the cooked meatballs atop the rice and cover with tomato sauce. Each meatball uses about four ounces of ground turkey. Once serving should be two meatballs and a half-cup of cooked rice.
