Tuna & Cream Cheese Omelet

Ingredients:
1 whole egg
2 egg whites
5 oz. can chunk white albacore tuna
2 tbsp. light whipped cream cheese
Cooking spray

Directions:
Liberally coat a frying pan with nonstick spray & place over medium heat. When pan is warm, pour eggs in & let set slightly, without stirring. In a small bowl, combine tuna & cream cheese & set aside. Slide a large spatula under eggs to loosen from pan & then pour tuna mixture onto one side of eggs. Using the spatula, fold the other side over tuna mixture. Cook until the eggs are fully set.
