Vanilla Orange Protein Pancakes

Ingredients:
1 scoop vanilla whey protein isolate
1/2 cup whole-wheat flour
1/4 cup quick oats
1 pkg. Splenda (or other sugar substitute of choice)
1 tsp. cinnamon
1 tsp. baking powder
1/2 cup fat-free milk
1/4 cup orange juice
1 tsp. egg white substitute
Olive oil cooking spray

Directions:
Preheat a griddle or skillet to a medium heat. In a large bowl, combine protein powder, wheat flour, oats, Splenda, cinnamon & baking powder. Set aside. In a small bowl whisk together the milk, orange juice & egg white substitute. Combine the mixture with the contents of the larger bowl, being careful not to overmix. Lightly spray the griddle with olive oil cooking spray. Pour 1/4 cup batter onto the griddle. Cook for 2 minutes or so until tops are bubbly. Turn pancakes over & cook for 2 more minutes.
