Here's what you should try this very briefly.
1. You WILL have a dominant side in the gym. It's just a natural characteristic where you will be slightly stronger on one side for many reasons. By using unilateral exercises you will force the weaker side to work just as hard. This may be a very minor difference, but over 52 weeks of the year it can equate a noticeable difference.
2. Mentally when you can focus on ONE side you will potentially be able to squeeze that muscle harder and create more tension within that area for instance. Ultimately this can equate to more growth.
3. When you use one hand at a time you can create different angles by pulling/pushing very slightly differently to create extra emphasis on one portion/area of a muscle group. Again this can be GREAT if you are struggling to bring a specific area up.
Pick at least two unilateral exercises per body part and mentally focus on squeezing that muscle harder, for longer (slower rep tempo) and see if you can feel the difference.
