12 oz. tiliapia
1/2 cup quinoa
1 oz. dried cranberries
1 oz. chopped walnuts
1/4 tsp. lemon pepper seasoning
1 cup water
Directions:
Preheat oven to 350 degrees F. Lay fish on foil-lined baking sheet & sprinkle with lemon pepper seasoning. Place in heated oven and let bake for 20-25 minutes or until fish flakes with fork. While the fish is baking, measure 1/2 cup of quinoa into rice cooker. Add 1 cup of water, stir, cover with lid and turn on the rice cooker. Cooker will turn off when the quinoa is done - about 15 minutes. Transfer cooked quinoa to a bowl, add cranberries & walnuts and fluff with fork. Combine with fish on a plate. Enjoy.

If you don't have a rice cooker, then cook the quinoa on the stovetop according to the directions. If you don't like quinoa, go with brown rice. As for the fish, you don't like tilapia, then use any another fish. I'd use tuna, salmon or even halibut.
