Soft Tacos

Ingredients:
1 tbsp. olive oil
1 lb. extra lean ground beef
2 tbsp. taco seasoning
1/2 red onion, diced
1 yellow bell pepper, thinly sliced
1 cup baby spinach
4 8-inch whole-wheat flour tortillas
1 fresh tomato, diced
4 tbsp. salsa
4 tbsp. nonfat Greek yogurt
Shredded low-fat cheddar or Monterey Jack cheese

Directions:
Heat oil in a large skillet. Saute onions & peppers until soft. Add beef and cook, stirring and chopping, until meat is cooked through and no longer pink. Add taco seasoning and cook 1 more minute. Remove from heat. Arrange 1/4 cup spinach and 1/4 of the diced tomato on each tortilla. Spoon on the meat mixture; top with salsa, cheese and Greek yogurt. Wrap tortilla, folding at the bottom to prevent spillage. Enjoy!
